Paying rent to your partner doesn’t have to be that different from paying a landlord
The OP writes that he and his girlfriend talked about finances a lot before starting to live together. Apparently, it was still not enough, or something happened in between then and the moment she started seeing their arrangement as unfair.

The girlfriend’s main argument seems to be that she should pay her boyfriend rent because the money will have been for nothing in the event that they break up.
